Do someone having any doc for "Restore RAC 2 node DB RMAN backup to stand alone DB"
and after creating the standalone DB can we keep on applying the archieve log on this DB |

Yes, there is no problem restoring RAC to standalone.
The only thing to think is after restoring the spfile (if this is your case) you have to create an init.ora file and change all RAC parameters to standalone one, for instance "cluster_database" to FALSE, "cluster_database_instances" to 1, "instance_number" to 0... and restart the instance with this init.ora file before going on with the recovery.

Yes until you open this database.
If you open it you lose the link with the original database, it becomes a new and independent incarnation that is a new database.
